Vantre in Paris, with over 5000 organic bottles and signature cuisine
Sommelier Marco Pelletier, formerly of Bristol and Taillevent, oversees more than 5,000 organic bottles, while chef Masaki Nagao, formerly of Clarence, cooks with precision.
In this Parisian room with oak floors, bistro chairs and vintage lamps, the sommelier oversees a list of organic wines with more than 5000 bottles.
Japanese chef Masaki Nagao creates meticulously crafted dishes. On the night of our visit, the à la carte menu featured signature gnocchi under a veil of golden sage butter; crispy asparagus enhanced with sea urchin, smoked ricotta, and blood orange; a savory tart filled with pigeon and foie gras, with a parsnip mousseline and fried artichokes; and a perfectly roasted duck, to be shared, with spinach, jus, and crispy asparagus.
For dessert, a slightly runny chai crème brûlée, accompanied by vanilla ice cream.
The lunch menu is also worth trying: nectarine gazpacho with anchovies and ricotta, grilled Iberian pork shoulder with smoked potato puree and red peppers, and chocolate mousse with strawberries and rosemary ice cream.
Among the wines are a blanco de Arbois de Jérôme Arnoux (€8 per glass), a tinto de Bourgogne de Caroline Bellavoine (€7), a blanco de Sancerre del Domaine Denizot (€30 a bottle) and a Saint-Joseph tinto del Domaine Rouchier (€55).
Lunch menus cost between €17 and €21, and the à la carte menu costs between €41 and €52.
