What is the difference between a cake and a tart?

Whether it's a holiday, a rainy afternoon, or just an ordinary Thursday, there's always an excuse to bake. It's time to pull out your recipe book, choose your favorite ingredients, and create something delicious. Thinking of a cake? Maybe a tart? Wait, are they the same thing? What's the difference?

Whether it's a holiday, a rainy afternoon, or just an ordinary Thursday, there's always an excuse to bake. It's time to pull out your recipe book, choose your favorite ingredients, and create something delicious. Thinking of a cake? Maybe a tart? Wait, are they the same thing? What's the difference? And let's not even get started on how galettes fit into all of this.

At first glance, tarts and pies look quite similar: both are round pastries with a sweet or savory filling. But appearances can be deceiving, and these two pastries have some key differences that make them unique.

Simply put, a pastry is a baked dish with a filling in a pastry shell, usually with a top and bottom layer. A tart, on the other hand, is more of a filling inside a pastry shell without a top layer. The difference lies mainly in the pastry and its preparation.

What makes a cake a cake?

In the case of pies, the essential elements are the classic pastry and a generous filling. A traditional pie is baked in a relatively deep pan with sloping sides and usually has a pastry base covered with another layer of puff pastry. The top can be a solid lid, a lattice top, or some other decorative design. However, not all pies have a top layer. Pumpkin and pecan pies, for example, are baked with only the filling visible and a pastry base.

The pastry is typically flaky and tender thanks to the fat used. Common ingredients include flour, salt, cold water, and a combination of fats such as butter, lard, or margarine. Keeping the fat and water cold helps create the characteristic flaky texture of a good pie crust.

The filling is usually the star of the show, with a generous amount poured into the pastry. It can be sweet, as in this simple classic raspberry tart, or savory, as in this comforting turkey pie. Once baked, tarts are generally cut into slices and served straight from the tin in which they were baked, giving them that homemade, family-friendly feel.

What makes a cake a cake?

A tart begins with a firm pastry base that gives the dessert its characteristic shape. Unlike a typical two-layered tart, a tart has only one base, leaving the filling exposed. The pastry contains ingredients such as flour, unsalted butter, salt, and often sugar and eggs. The combination of these ingredients creates a firm, tender, and crumbly pastry that holds its shape perfectly once baked.

Tartlets are baked in shallow tins with straight sides, giving the pastry a clean, defined look. Many tins also have removable bases, allowing you to take the finished tartlet out and place it directly onto a plate. This makes serving the dessert quick and easy.

The filling can be sweet or savory, depending on the recipe. For sweet tarts, fruit, chocolate, and custard are common choices for a delicious dessert. If you prefer something savory, vegetables, cheese, or eggs will turn any tart into a hearty option for breakfast or brunch. Plus, since tarts often have an elegant presentation, they're both a decorative element and a treat. Want to start with something simple?
