However, a dry turkey can still be edible if you know how to rehydrate it. Fortunately, there are two easy ways to revive it and restore its texture. One involves adding gravy, while the other requires a little magic with butter and broth.

If you choose the first option, it's recommended to follow Ina Garten's advice. Start by pouring a generous amount of sauce into the bottom of a large baking dish. Then, cut the turkey into individual portions and place them in the dish, submerging them in the sauce. Cover the turkey with aluminum foil and return it to the oven.

During the 15 to 30 minutes the turkey spends in the oven, it will absorb the juices from the gravy, rehydrating the meat and making it perfect to accompany the Christmas mashed potatoes, which can be prepared in advance and frozen. The second method, using butter and broth, also requires returning the turkey to the oven for a short time. However, it's just as simple and doesn't waste any of the precious gravy.

Use butter and broth to fix a dry turkey

If you haven't prepared the gravy for the turkey yet, no problem. Broth and butter will take its place when it's time to revive the turkey. (If you have spreadable butter on hand, you can make a compound butter for even more flavor.) This method for reviving the turkey follows similar steps to the first, only instead of placing the sliced turkey in a serving dish, you place it in a large baking pan or roasting tin.

Once the turkey is placed in the roasting pan, melt a little butter (about 2 tablespoons) and drizzle it over the meat. Then, pour 1 to 2 cups of broth over the bird. The exact amount of broth depends on the size of the turkey, but generally, a breast requires 1 cup. Naturally, turkey broth is ideal for this. However, chicken broth or even vegetable broth will work well in a pinch. The turkey, which should be covered again with foil, will remain in the oven for 15 minutes to half an hour before serving. This method can also be used after the turkey has been sliced.

Some additional tips for a juicy turkey

These tricks may only be necessary for the white meat of the turkey due to the differences in cooking times between white and dark meat. This is especially true if you're cooking a whole turkey instead of pieces. In this case, the turkey breast (its white meat) is placed breast-side down on the roasting pan, a position that brings it closer to the oven's heating elements, which speeds up cooking.

To make matters worse, the breast also has less fat than the thighs, making it more prone to drying out as the bird's juices evaporate. That said, if your turkey thighs still need a little TLC, these tricks work for dark meat too. To prepare it, place the turkey thighs in a shallow dish with just 1/4 cup of broth or gravy. The rest of the steps are virtually the same. That is, cover the thighs with aluminum foil before putting them in the oven. Let them baste with their own juices long enough to absorb the flavors. If you do it this way, your patience will be rewarded with a mouthwatering, deliciously juicy turkey.
