Chantelle Nicholson opens Apricity, her conscious cuisine restaurant in Mayfair
New Zealand chef Chantelle Nicholson has opened Apricity, a Mayfair restaurant that celebrates conscious cuisine with a focus on regeneration, generosity and light.
Located on Duke Street, the restaurant reflects Nicholson's commitment to socially responsible gastronomy and sustainability. Its aim is to create a greener, healthier, and more conscious community in the heart of Mayfair. The name, which means "the warmth of the sun in winter," encapsulates this purpose.
Nicholson explained to CODE that his head chef, Eve Seemann, will adopt a zero-waste approach. In addition, the kitchen will source its ingredients from small farmers and foragers.
The menu will include dishes such as miso-cured spring cabbage; smoked hemp cream and black garlic ketchup; yellow and black pearl oyster mushrooms, "XO" sauce, Flemish wheat and wild garlic emulsion; shio koji-cured pollock, Shetland mussels, sambal butter and purple broccoli; and an Emerald milk chocolate baked mousse with miso ice cream and brown sugar.
The restaurant will also feature an extensive low-intervention wine list, as well as zero-waste cocktails such as the kimchi margarita and the beetroot negroni.
