Although Louis Linster grew up in the kitchen of his mother, the renowned chef Léa Linster, he didn't receive formal training. Instead, he immersed himself in haute cuisine and creates his own modern take on French classics at the "Restaurant Louis Linster" in Luxembourg. From the outside, the building appears unassuming, but upon closer inspection, floor-to-ceiling windows offer a direct view into the kitchen. Eight chefs and two pastry chefs work here on a sophisticated nine-course menu. The dining room is decorated in muted, warm colors, and the heavy carpet muffles footsteps – inviting you to arrive and feel at ease. Linster's cuisine also contributes to this atmosphere. The freedom of this self-taught chef allows him to imbue French classics with his own unique lightness. The beurre blanc served with the Arctic char is based on dashi, the grilled Norwegian scallop is sweet and full-bodied, and its miso glaze provides the perfect balance of saltiness. The necessary acidity is provided by a mousseline with Vin jaune – a perfect match.
