In recent years, the offerings have expanded significantly, and today, alongside hotels with pool bars, we also find other options. Some focus on a relaxed atmosphere, others focus on mixology, others offer more sophisticated menus, and others stick to simple yet well-crafted options, designed to complement a Roman summer day. We've rounded up some of the restaurants with pools in Rome to keep an eye on for summer 2026, places worth visiting even just for a poolside dinner.

SEEN by Olivier

Among the most centrally located poolside addresses in the city is the rooftop of Anantara Palazzo Naiadi, overlooking Piazza della Repubblica. The hotel's panoramic terrace has reopened for the summer season with a pool, sky bar, and the culinary offerings of SEEN by Olivier, a restaurant helmed by chef Olivier da Costa. The space spans approximately 900 square meters, overlooking Rome's rooftops, and is open for different moments of the day, from light lunches by the pool to aperitivo and evening dinner with a DJ set. Seen's cuisine blends Mediterranean and Brazilian influences, while the drinks list changes seasonally.

Donkey’s Bar

Among the new additions for summer 2026 is Donkey's Bar, a new project by the Acquolina Group within Palazzo Dama, a boutique hotel just steps from Piazza del Popolo (which replaces Pacifico). The restaurant is centered around the hotel's garden and swimming pool, one of the hotel's most recognizable spaces during the summer season. The cuisine, overseen by Daniele Lippi and resident chef Giorgio Faga, draws inspiration from Italian and Lazio traditions with a contemporary and international twist. The menu features dishes such as cacio e pepe spaghettoni with red prawns, creamed cod, and mezzepaccheri with three tomatoes. The restaurant is open from morning until after dinner, offering lunch, aperitivo, a cocktail bar, and poolside service.

Organics SkyGarden

Located near Via Veneto, on the top floor of the Aleph Rome Hotel, the Organics SkyGarden returns for summer 2026 with a panoramic terrace featuring an infinity pool, sun loungers, and a pool bar open daily from 10:00 a.m. to 6:00 p.m. Here, you can spend the day enjoying light lunches, cocktails, and aperitifs overlooking Rome's rooftops, with a more casual food menu designed to complement your time by the pool. In the evening, the space changes atmosphere with DJ sets, music events, and a drinks menu inspired by Rome's neighborhoods. The menu dedicated to the city's hills is also interesting, featuring small plates to share and snacks.

The Roof

Among the most scenic pool terraces in Rome during the summer is The Roof at The Rome EDITION, a rooftop overlooking the rooftops of the historic center and featuring a travertine pool surrounded by sun loungers and a lounge area. The menu changes throughout the day: at lunch, the focus is on light Mediterranean cuisine, including burgers, sandwiches, salads, fried calamari, and pasta dishes like tagliolini with clams and gnocchetti alla sorrentina. In the evening, the menu expands to include more structured dishes combining seafood and Roman tradition, from the "Edition" parmigiana to tonnarello cacio e pepe, and grilled fish. The atmosphere remains that of an elegant yet relaxed rooftop, particularly popular at sunset.

The Social Hub

Among the Roman summer hotspots with pools is The Social Hub, a large hybrid project in San Lorenzo that combines hospitality, coworking, a gym, events, and spaces dedicated to neighborhood life. The facility also offers a variety of dining options, from Roman trattorias to pizza at Berberé. The pool is located on the panoramic rooftop, flanked by a cocktail bar and a small food court designed primarily for lunch and aperitivo, offering simple dishes like club sandwiches, omelets, and rigatoni cacio e pepe. Access to these services is through club memberships, with plans starting at around €120 per month.

Rome Knights

Among Rome's top spots for spending a day by the pool or dining out is the Rome Cavalieri, a well-known hotel in the Balduina-Monte Mario area with a large outdoor area overlooking the city. Among the pool-front venues is the rooftop at the W Rome, divided between a solarium with a pool and the new Citrico Rooftop – Pizza and Cocktail. This culinary project, based on the expertise of Sicilian chef Ciccio Sultano, offers long-rising pizzas, raw seafood, and Mediterranean dishes perfect for sharing. The common thread is the use of citrus fruits, present in both the dishes and the cocktail list. On the other side of the terrace is the Wet Deck, a space with a pool (open from 10:00 a.m. to 6:00 p.m.), loungers, and a food and beverage service designed to while away a few hours al fresco with drinks, snacks, and aperitifs overlooking the rooftops of Rome.

Village of Mysticism

In eastern Rome, between Torre Angela and Torre Spaccata, Borgo della Mistica continues to be one of the most popular summer destinations for those seeking a pool surrounded by greenery without straying too far from the city. The project stems from the renovation of an old farmhouse and now combines a restaurant, relaxation area, and a pool open daily from 10:00 am to 7:00 pm. For summer 2026, umbrellas and loungers (€30) will remain, but a single-entry option with loungers included (€12) will also be making its debut. Poolside, sandwiches, bowls, salads, and express pasta dishes are available, perfect for a quick lunch or a full day under the sun.
