North Loop’s Newest Sushi Restaurant Opens Today
Billy Sushi, the new sushi restaurant that marks the return to the raw fish arts of chef and restaurant owner Billy Tserenbat begins taking orders today. The new restaurant and bar located in the old Sweet Chow space is all stocked up and, perhaps more remarkably, the dining room is all set for service.
Orders can be placed by calling the restaurant and a limited opening menu is now available online. The opening rolls are a mix of American classics like the California roll, and more elaborate specialty rolls. There is also yakisoba and udon.
Tserenbat rose to prominence with the Twin Cities first sushi truck, Sushi Fix. That business moved out to Wayzata where it drew rave reviews. The chef then opened a Mexican restaurant in the same strip mall complex, Baja Haus. He then sold the sushi business, and would eventually launch a new food truck, Bibuta, this time serving poke. While raw fish adjacent, it’s just not sushi. He missed it. This new venture marks the return for the charismatic chef.
Billy Sushi will include a sushi bar view of the open kitchen, a large dining space, and a front bar that will eventually serve drinks including a fine Japanese whisky selection. While initial service will no doubt be curbside take away, the restaurant is also clearly ready for the day when we can return to dining inside. The restaurant can hold 130 diners, but will initially be set for 70, with space between seats and tables.
