Yeast pies with plums
- Butter
- Milk
- dry yeast – 10 g
- flour – 500 g
- sugar - 4 tbsp. l.
- vanilla sugar – 1 tbsp.
- egg – 1 pc.
- salt - on the tip of a knife
- refined sugar – 16 cubes
- plums – 16 pcs.
- Prepare the dough for the pirozhki. Melt the butter and let it cool slightly. Dissolve the dry yeast in warm milk. Stir the mixture into the sifted flour. Add the sugar, vanilla sugar, butter, egg, and salt. Knead the dough thoroughly, cover with a towel, and let it sit in a warm place for 1.5 hours.
- For the filling, wash the plums and cut them in half. Remove the pits. Place the dough on the work surface, knead it again, and divide it into 16 pieces. Roll each piece into a flatbread.
- Place a plum half, cut side up, in the center, and place a cube of refined sugar inside. Cover with the other plum half. Pull the edges of the flatbread up over the filling and pinch to seal.
- Place the resulting dough pieces on a baking sheet lined with parchment paper. Cover with a towel and let rise for 15 minutes. Preheat the oven to 180°C. Bake the pies for about 30 minutes.
These plum yeast pies aren't as simple as they seem at first glance. You might think, "What's so special?" A simple dough with a simple fruit filling. Well, in our case, things are a little different. The dough is indeed simple, but the filling is prepared in a unique way. In fact, it's not prepared at all! Place a plum half on a flattened dough surface, replace the pit with a cube of refined sugar, and top with the other plum half. Next, shape the pie and repeat the process with the remaining plums. The result, after baking, is a wonderful treat with a golden-brown crust on the outside and a delightfully juicy center, possessing a delicate sweet and sour flavor.
After baking, plum pies need to be allowed to cool until warm. Otherwise, you risk burning yourself with the hot filling. Furthermore, after "resting," it will thicken slightly, which will improve the flavor of the pies.
If your apartment is cool, yeast dough for pies may take longer to rise than stated. Be sure to wait until the dough has doubled in size, otherwise the dough won't be fluffy enough.
