Cheese and tomato appetizer

Cheese appetizer with tomatoes

Ingredients · Servings 6
  • Tomato juice
  • Mozzarella Cheese
  • Garlic
  • Salt
  • Tomato
  • Basil
  • Edible gelatin
Method · 2 h 30 min
  1. Soak the gelatin in tomato juice and let it sit for 20 minutes. Wash the tomatoes and herbs. Peel the garlic. Slice the cheese, cut the tomatoes into rings, and chop the herbs and garlic.
  2. Heat the tomato juice, stirring, until all the gelatin has dissolved. Line the molds with plastic wrap, leaving a long edge. Dip the tomato slices in the juice and gelatin and place them in the bottom of the molds. Sprinkle with salt, pepper, garlic, and herbs. Top with a layer of cheese slices, also dipping them in the tomato juice. Season and sprinkle with herbs.
  3. Repeat the layers several times. Pour the remaining juice into the molds, cover with plastic wrap, and refrigerate for 3 hours. Remove the plastic wrap before serving.

This cheese and tomato appetizer is a kind of individual aspic, only without broth or meat. Tomato slices and mozzarella slices are dipped in tomato juice and gelatin and layered in a mold. Each layer is seasoned with garlic, salt, pepper, and herbs like basil and cilantro. Then it's time to add the gelatin; the juice "sets" in the refrigerator, and the appetizer hardens in a few hours. To serve, simply carefully invert the molds onto a serving plate, remove the film, and garnish the layered towers with basil leaves. The appetizer is light, flavorful, and elegant.

Tomatoes with cheese and garlic are a wonderful cold appetizer that can be served for both everyday and festive meals. Its flavor, of course, depends on the ingredients you choose. It's best to choose large, ripe tomatoes, but not too soft. Garlic and herbs are the most flavorful! The quality of the filling depends on the consistency of the Adyghe cheese: the softer it is, the better. Olive oil also plays a key role. The best option, of course, is extra virgin olive oil, which will give the appetizer a more piquant flavor. And that's all about the filling!
