Watermelon tartare with mango passion fruit yolk

We continue with refreshing recipes to relieve summer temperatures with this faux watermelon tartare with passion fruit mango yolk from CETT.

Preparation: 50 minutes

Cooking time: 20 minutes

Ingredients

(For the fake tartar)

400g of watermelon

30g of vodka

60g red fruit puree

20g of lemon juice

(For the passion fruit mango yolk)

100g of mango

50 g of passion fruit

120g of syrup

1g of xanthan gum (optional)

200g of water

50 of syrup

16g of neutral gelatin powder

Elaboration

(For the fake tartar)

-We cut the watermelon into small, even cubes.

-Dissolve all the liquids in a bowl until they are well combined

-We combine the watermelon cubes with the liquid and place it in the vacuum machine. Once the vacuum is created, the liquid will penetrate the watermelon, giving it a dark red appearance.

(For the passion fruit mango yolk)

Add the mango and passion fruit to the syrup and blend well. If desired, you can thicken it with a little xanthan gum. Remove any air bubbles from the vacuum sealer, or let the liquid rest for 12 hours in the refrigerator.

-We place the liquid in semi-sphere silicone molds, freeze and set aside.

-We heat the remaining water and syrup with the vegetable gelatin powder. We bring it to a boil.

Once the liquid cools to 80°C, we can dip the frozen passion fruit spheres into it using a needle. As they thaw, the inside remains liquid while the outside gels, giving them the appearance of an egg yolk.

We assemble the dish as if it were a tartare, placing the watermelon cubes in a metal ring giving it a round shape and topping it with the passion fruit mango yolk.
