Por qué el vino tinto no debe servirse a temperatura ambiente

La temperatura de servicio cambia el equilibrio de un tinto: según la variedad, el ideal va de los 10 a los 16 grados Celsius.

Some wineries have a dedicated wine refrigerator, but most enthusiasts keep their bottles at room temperature in an easily accessible place. Opening a bottle and pouring it straight away seems the most logical thing to do with red wine. However, this common practice actually leads to a temperature error.

Depending on the variety, red wines should ideally be served between 10 and 16 degrees Celsius, with the optimal temperature being between 11 and 13 degrees, the range adopted as standard by wine shops. Unless the house is very cold, a red wine served at room temperature falls outside this range. Simply placing the bottle in the refrigerator for about ten minutes before serving will usually bring it to the ideal temperature.

Excessive heat is detrimental to wine. A lukewarm red wine will have an unbalanced flavor profile, as the acidity and tannins become discordant. If it gets too hot, it can even ferment again. A brief cooling, therefore, is always beneficial.

Not all red wines require the same temperature. Lighter, more refreshing reds, like Beaujolais or Lambrusco, can be slightly sparkling and should be served cooler, around 10 degrees Celsius or slightly lower, a temperature more typical of white wine. To achieve this, simply leave them in an ice bucket for a while.

At the opposite end of the spectrum are intense, full-bodied reds, such as Cabernet Sauvignon, Syrah, or Malbec. Chilling them too much would dull their flavors, so it's recommended to serve them at around 16 degrees Celsius (61 degrees Fahrenheit). Even so, they also need a few minutes in the refrigerator if they're coming from room temperature. Fortified wines, like port or Madeira, are served in that same range, and sweeter, more alcoholic varieties at a slightly warmer temperature.
