The best substitute for simple syrup in cocktails
Many classic cocktails, such as the Old Fashioned or the Gin Fizz, are sweetened with simple syrup, and there are liquid alternatives that provide more nuances.
Simple syrup is granulated sugar dissolved in water. It blends into the cocktail, while regular sugar tends to settle at the bottom. However, it barely adds any flavor, just a slight sweetness, so many bartenders opt for other sugary liquids, such as agave nectar, honey, or maple syrup.
Agave nectar is a popular choice for sweetening a spicy margarita. It comes from the sap of the agave plant, so it pairs especially well with tequila-based drinks. It's best to choose 100% agave nectar and, for better mixing, boil equal parts nectar and water or add a little warm water.
Honey pairs well with citrus fruits and is often found in the pantry. One example is Bee's Knees, a Prohibition-era drink made with gin, lemon, and honey. For a lighter syrup, equal parts honey and water can be boiled together.
Maple syrup works well in a bourbon Old Fashioned because it complements the sweetness of the whiskey and the citrus notes of the orange. Due to its high viscosity, it's best to dilute it by boiling it with an equal amount of water.
In general, the simple syrup in a recipe can be substituted with the same amount of the chosen liquid, allowing for more complex flavors without altering the balance between bitter, sour, and sweet.
