Chicken baked with garlic and bay leaves

- whole chicken – 1.5 kg
- dry white wine – 50 ml
- bay leaf – 8 pcs.
- softened butter – 50 g
- lemon – 1 pc.
- salt – to taste
- young garlic – 4 heads
- Wash the chicken, pat dry, and singe if necessary. Season the chicken inside and out with salt and pepper. Lift the skin off the breast at the neck and insert a little butter and a bay leaf on each side between the skin and the meat.
- Wash the lemon, cut it into 4 pieces and place it inside the carcass together with the remaining bay leaves.
- Tie the chicken legs tightly with twine.
- Brush the chicken on all sides with the remaining butter. Place the chicken, breast side up, in a baking dish and bake in a preheated oven at 200°C for 45 minutes.
- Remove the chicken from the oven. Baste the chicken with the cooking juices. Add unpeeled garlic to the pan and return to the oven for another 30 minutes. Transfer the chicken and garlic to a serving dish, cover with foil, and leave in a warm place. Carefully remove any fat from the pan.
- Place the pan over the heat and pour in the wine. Cook, scraping the juices from the bottom and sides of the pan with a spatula, for 10 minutes. Pour the sauce over the chicken and serve.
