A Christmas dinner with delicious vegan options that are light for your body

The end of the year is here, and with it come the Christmas dinners, parties, and gatherings. We know we have to prepare everything in advance. If you're looking to add a little originality to your Christmas menu, I want to share some vegan recipes with seasonal flavors that you're going to love.

Delicious Vegan Recipes for Your Christmas Dinners

Undoubtedly, these vegan recipes are very light on the body and full of healthy fats, but the purpose of these recipes is not to make you vegan, it is simply to offer you some lighter options and dishes for your Christmas menu.

I'm sharing 12 vegan recipes for your Christmas dinners, from appetizers and side dishes to main courses and desserts, perfect for surprising your guests with warm, festive, and 100% plant-based flavors.

Ingredients:

  • 1 medium pumpkin, peeled and cut into cubes
  • 3 carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tbsp. of grated fresh ginger
  • 1 can (400 ml) of coconut milk
  • 4 cups of vegetable broth
  • 1 tbsp. of olive oil

Preparation:

  • In a pot, heat the olive oil and sauté the onion and garlic until golden brown.
  • Add the pumpkin, carrots, and ginger. Cook for a few minutes, then add the vegetable broth.
  • Cook over medium heat for 20-25 minutes, until the vegetables are tender.
  • Add the coconut milk and mix. Blend the soup until smooth.
  • Season with salt, pepper, and nutmeg. Serve hot, garnished with pumpkin seeds and fresh parsley.

Tofu “ricotta”:

  • 400 g of firm tofu
  • 2 tbsp. of lemon juice
  • 1 tbsp. of nutritional yeast
  • 1 finely chopped garlic clove
  • 1 tbsp. of olive oil
  • Salt and pepper to taste

For the lasagna:

  • 2 cups of pumpkin puree (you can bake pumpkin and then puree it)
  • 1 package of egg-free lasagna sheets (prepare according to package instructions)
  • 300g of fresh spinach
  • 1 tbsp. of olive oil
  • Salt and pepper to taste
  • Nutmeg to taste
  • 1 cup of marinara sauce

Preparation:

  • To prepare the "tofu ricotta": Drain the tofu and crumble it in a food processor. Add lemon juice, nutritional yeast, garlic, olive oil, salt, and pepper. Process until you have a mixture with a ricotta-like texture. Taste and adjust the seasoning.
  • Cook the spinach: In a pan with a little oil, cook the spinach until wilted. Drain off any excess water and set aside.
  • In a baking dish, place a layer of lasagna sheets, a layer of pumpkin puree, a layer of spinach, and a layer of tofu "ricotta." Repeat until the dish is full, finishing with a layer of marinara sauce.
  • Bake at 180°C for 30-35 minutes or until the layers are well cooked and the surface is golden brown.
  • Let it rest for 10 minutes before serving.

Ingredients:

  • 2 medium beets, cooked and diced or thinly sliced
  • 1 small jicama, peeled and diced or cut into thin strips
  • 1 orange, peeled and segmented
  • 1/2 cup pomegranate seeds (optional, for a festive touch)

For the hibiscus dressing:

  • 1/2 cup of dried hibiscus flowers
  • 1 cup of water
  • 2 tbsp. of apple cider vinegar or lemon juice
  • 1 tbsp. of agave honey or maple syrup (adjust to taste)
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Preparation:

  • To prepare the hibiscus for the dressing: Boil the cup of water and add the hibiscus flowers. Cook for 5-7 minutes until the water turns a deep red color. Strain the flowers and let the concentrate cool.
  • Prepare the dressing: In a bowl, mix the hibiscus concentrate with the apple cider vinegar or lemon juice, agave nectar, olive oil, salt, and pepper. Taste and adjust the sweetness or acidity to your liking. Set aside.
  • On a large plate or salad bowl, arrange the beet cubes or slices, jicama, and orange segments. Sprinkle the pomegranate seeds over the top and season with salt and pepper to taste.
  • Just before serving, drizzle the hibiscus dressing over the salad and garnish with mint leaves or fresh parsley for a touch of color and freshness.

Ingredients:

  • 1 kg of sweet potato, peeled and cut into 2.5 cm cubes
  • 2 teaspoons of salt
  • 40g of finely chopped spring onion (green parts)
  • 1 sprig of fresh flat-leaf parsley, chopped
  • 1 small clove of garlic, pressed or chopped
  • 60 ml of sour cream
  • 45g of butter, cubed
  • Ground black pepper
  • 5 ml of extra virgin olive oil

Preparation:

  • Place the sweet potato cubes in a large pot and add enough water to cover them by about 2.5 cm. Add 1 teaspoon of salt and bring to a boil over medium-high heat. Reduce heat and simmer, uncovered, until the sweet potatoes are tender, about 9 to 12 minutes.
  • Drain well and then return the sweet potatoes to the pot. Mash the sweet potatoes until you reach the desired consistency.
  • Add the green onion and parsley, reserving a small amount of each for garnish. Add the garlic and mix to combine. Season to taste with additional salt and freshly ground black pepper.
  • Serve the sweet potato puree in a bowl, sprinkle with the reserved green onion and parsley, drizzle lightly with olive oil and serve.

Ingredients:

  • 5 medium potatoes, peeled and diced
  • 4 cloves of garlic, peeled
  • 2 tbsp. of olive oil
  • 1 tbsp. of chopped fresh rosemary
  • 1/2 cup unsweetened plant-based milk (soy, almond, etc.)
  • Salt and pepper to taste

Preparation:

  • Cook the potatoes and garlic in salted water until tender, approximately 15-20 minutes.
  • Drain and mash the potatoes together with the garlic. Add the olive oil and plant-based milk little by little, until you get the desired consistency.
  • Add rosemary, salt, and pepper to taste. Serve hot.

For the meatballs:

  • 1 cup of cooked chickpeas
  • 1/2 cup of oats
  • 1 clove of garlic
  • 1 tbsp. of chopped parsley
  • 1 tbsp. of soy sauce
  • 1/2 tbsp. of ground cumin
  • Salt and pepper to taste
  • 1 cup of tomato sauce
  • 1/2 onion, chopped
  • 1 clove of garlic, chopped
  • 1 tbsp. of olive oil

Preparation:

  • To prepare the meatballs: In a food processor, blend the chickpeas, oats, garlic, parsley, soy sauce, cumin, salt, and pepper. Form into small balls and place them on a baking sheet.
  • Bake the meatballs at 180°C for 20 minutes, until golden brown.
  • To prepare the sauce: In a frying pan, heat the olive oil and sauté the onion and garlic. Add the tomato sauce, salt and pepper and simmer for 10 minutes.
  • Serve the meatballs covered with the sauce and garnish with basil or parsley.

Ingredients:

  • 1 cup of green lentils, rinsed and drained
  • 1 chopped onion
  • 2 cloves of chopped garlic
  • 1 carrot, diced
  • 1 chopped celery stalk
  • 2 cups of fresh mushrooms, sliced
  • 1 can (400 g) of crushed tomatoes
  • 4 cups of vegetable broth
  • 1 tbsp. of fresh or dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 medium potatoes, diced
  • 2 tbsp. of olive oil
  • Fresh or dried rosemary to taste.

Preparation:

  • To prepare the stew: In a large pot, heat a little oil and sauté the onion, garlic, carrot, and celery until tender. Add the mushrooms and cook until they release their juices.
  • Add the lentils, tomatoes, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 35-40 minutes, or until the lentils are tender. Adjust the salt and pepper to taste.
  • Bake the potatoes: Preheat the oven to 200°C (400°F). On a baking sheet, toss the potatoes with olive oil, rosemary, salt, and pepper. Bake for 25-30 minutes, stirring halfway through, until golden brown and crispy. Serve the stew in bowls with a portion of roasted potatoes on top.

Ingredients:

  • 4 large poblano peppers, roasted and peeled (seeds removed)
  • 1 cup of cooked quinoa
  • 1 cup of cooked black beans
  • 1/2 onion, chopped
  • 1 clove of garlic, chopped
  • 1 tbsp. of olive oil
  • 1/2 tbsp. of ground cumin
  • 1/2 tbsp. of smoked paprika
  • Salt and pepper to taste
  • Fresh chopped cilantro for garnish
  • Vegan cheese of choice to melt over the stuffed peppers.

Preparation:

  • Prepare the filling: In a skillet, heat the olive oil and sauté the onion and garlic. Add the quinoa, black beans, cumin, paprika, salt, and pepper. Cook for a few minutes and adjust the seasoning.
  • Fill the chiles: Carefully fill each chile with the quinoa and bean mixture. Place the chiles on a baking dish, sprinkle with vegan melting cheese, and bake until the cheese is melted.
  • Serve them hot and garnish with fresh cilantro.

Ingredients:

  • 1 eggplant, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 tomato, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup of tomato sauce
  • 2 tbsp. of olive oil

Preparation:

  • Prepare the base: In a baking dish, spread the tomato sauce on the bottom.
  • Assemble the ratatouille: Place the slices of eggplant, zucchini, tomato, pepper and onion alternately on top of the tomato sauce.
  • Drizzle with olive oil, season with salt, pepper and fresh herbs.
  • Bake at 180°C for 40-45 minutes, until the vegetables are tender. Serve hot.

Ingredients:

  • 1 cup of coconut milk (refrigerated and only the creamy part)
  • 1 ripe avocado (to give it creaminess)
  • 3 tbsp. of unsweetened cocoa powder
  • 3 tbsp. of maple syrup, honey or agave syrup (to taste)
  • 1 tbsp. of vanilla extract
  • A pinch of salt
  • Fresh fruit, nuts or cocoa flakes for decoration (optional)

Preparation:

  • If you're using coconut milk, be sure to refrigerate it beforehand so the cream separates from the water. We'll only be using the solid part.
  • Blend the ingredients: In a blender or food processor, combine the coconut cream, avocado, cocoa powder, maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy. Taste for sweetness and adjust, if desired, by adding more maple syrup, honey, or cocoa powder.
  • Divide the mousse into small containers or individual glasses and refrigerate for at least 1 hour to give it a firmer, more refreshing texture.
  • Before serving, garnish with fresh fruit such as strawberries or raspberries or chopped nuts.

This vegan chocolate mousse is rich in antioxidants and healthy fats, thanks to the avocado and cocoa. Plus, it's very easy to make and requires no cooking.

For the base:

  • 1 cup of ground oats
  • 1/2 cup ground almonds
  • 1/4 cup melted coconut oil
  • 2 tbsp. of maple or agave syrup

For the filling:

  • 3 medium apples, peeled and thinly sliced
  • 2 tbsp. of brown sugar
  • 1 tsp of cinnamon
  • 1/2 tbsp. of nutmeg
  • 1/4 cup sliced ​​almonds (optional)

Preparation:

  • For the base: Mix the oats, almonds, coconut oil, and syrup. Press this mixture into the bottom of a tart pan and refrigerate.
  • For the filling: In a bowl, mix the apple slices with sugar, cinnamon, and nutmeg. Place the apples on top of the oat base.
  • Bake at 180°C for 30-35 minutes or until the apples are tender. Garnish with slivered almonds and serve warm.

For the base:

  • 1 cup of walnuts or almonds
  • 1 cup of pitted dates (soaked in warm water for 10 min)
  • 1 pinch of salt

For the filling:

  • 2 cups of cashew nuts (soaked in water for at least 4 hours)
  • 1/2 cup coconut cream
  • 1/4 cup lemon juice
  • 1/3 cup maple or agave syrup
  • 1 tbsp. of vanilla extract
  • 1/4 cup melted coconut oil

For coverage:

  • 1 cup of fresh or frozen berries (strawberries, raspberries, blueberries)
  • 2 tbsp. of maple or agave syrup

Preparation:

  • Prepare the base: In a food processor, process the walnuts, dates, and a pinch of salt until you have a sticky dough. Press this mixture into the bottom of a springform pan and refrigerate.
  • Prepare the filling: Drain the cashews and place them in a blender along with the coconut cream, lemon juice, maple syrup, vanilla, and coconut oil. Blend until smooth and creamy. Pour the filling over the crust and refrigerate for at least 4 hours (or overnight).
  • Prepare the topping: Cook the berries with the maple syrup until you have a thick compote. Let it cool and spread it over the cheesecake before serving.
