The best gourmet burger is made in Ourense
Martín Fernández, from Bágoa Gastrobar (Ourense), won the fourth edition of Burger Combat with A Fuxidía, a burger that "breathes Galicia through and through" and is a tribute to his grandmother in the form of a traditional beef cheek stew "just like she used to make it." A Fuxidía, he explained, means ephemeral, since every day at Bágoa Gastrobar they prepare La Efímera with whatever ingredients they have on hand that day, although always focusing on Galician products.
Chef Sergio Fernández, a member of the jury, highlighted that despite the number of ingredients, "at no point did one ingredient stand out above the others; it is very balanced and has a lot of flavor."
In the competition, organized by the Swedish bread company Lantmännen Unibake, Ángel Solsona, from Hamburguesería La Demo (Torrejón de Ardoz), came in second place with La Atrevida, made with matured beef, Gruyère cheese, Iberian bacon jam, marinated Iberian pork belly and Millionaire sauce; and third place went to Aldo Sebastianelli, from MENA (Pozuelo de Alarcón-Madrid), with his Blue Mena Burger with meat, red onion, hanging tomato, romaine lettuce, Cabrales cheese, quince, homemade sauce and butter.
