Zucchini and Ricotta Frittata: The Recipe
- 300 g courgettes
- 200 g ricotta
- 40 g grated Parmesan cheese
- 5 eggs
- extra virgin olive oil to taste

- Wash the courgettes and cut them into thin slices.
- Heat the oil in a pan and cook the courgettes for 6-8 minutes, until tender and some of the water has evaporated.
- Let the courgettes cool.
- In a bowl, beat the eggs with salt, pepper and Parmesan cheese.
- Add the ricotta and mix until the mixture is smooth and creamy.
- Add the courgettes and, if desired, chopped herbs.
- Pour the mixture into a lightly greased non-stick pan.
- Cook over low heat with a lid on for 8-10 minutes.
- Turn the omelette over with a plate or finish cooking under the grill for 3-4 minutes.
- Serve the frittata hot, warm, or even cold.
