While wine often gets the spotlight as a culinary ingredient, spirits also contribute significantly to food. Among them, tequila offers a particularly complex flavor: depending on the type and its use, it can enhance fruity, earthy, spicy, smoky, and caramelized notes. A small amount is enough, and a carefully chosen selection of accompaniments accentuates certain nuances.

Unaged blanco tequila is perfect for highlighting the vegetal, citrus, and sweet flavors of the agave. A marinade is a great starting point: the alcohol infuses the proteins with extra flavor and enhances the other ingredients. Combined with lime, it works well with pork ribs, shrimp, chicken, and even salmon.

The white agave can also be used raw. It's combined with agave syrup to macerate fresh fruits like watermelon, or it adds a touch to a fresh salsa. A splash added to ceviche gives it a more sophisticated finish. There are many ways to incorporate the distinctive flavor of agave into cooking.

Barrel-aged tequila, in its reposado style, offers a balance between fresh agave and the touch of wood. It's excellent for glazing, especially beef and pork, creating a rich blend of vanilla, smoke, and sweetness. Its notes also inspire pairings with chilies, such as beef fajitas with tequila and chili, or a complex stew with a splash of reposado.

Tequila's more subtle, nutty flavor is showcased in desserts like cakes and soufflés, where it pairs beautifully with chocolate. In savory dishes, it can be added to the butter served with a fine cut of meat. Connoisseurs can also enjoy a shot of the spirit to appreciate its nuances.

Whatever type you choose, it's best to select a tequila without additives: too many artificial ingredients in the bottle produce an unpleasant taste.
