- For the recipe for French fries with pear sauce and fresh fruit, peel the pear and cut it into chunks; cook it in a pan with 1 tablespoon of granulated sugar for 5 minutes, until it almost falls apart. Let it cool.
- Mix the yogurt with the grated zest of 1/2 lemon and 1 teaspoon of honey; combine with the cooked pear.
- Peel and cut the potatoes into 5 mm wide and 10-12 cm long parallelepipeds; rinse them in cold water and then soak them for 1 hour.
- Then blanch the potatoes in lightly salted boiling water acidulated with 2-3 tablespoons of vinegar, for 2 minutes after the water returns to a boil. Drain well and spread them on a tray to cool.
- Fry them in plenty of peanut oil at 170°C until golden brown.
- Finally, arrange them on a serving plate; sprinkle with icing sugar and serve with fresh fruit and pear sauce.
- Wine pairing: Choose a sweet, low-alcohol wine to pair with fruit and yogurt, and a sparkling one to accompany fried foods. We've always loved Carussin's Moscato d'Asti Filari Corti 2021: it's authentic, disarmingly drinkable, with fruity and balsamic aromas. 18 euros, carussin.it
