The finest varieties of Vercelli's rice tradition have been crafted with the company's over a century of experience to maximize their aroma, flavor, and color. The Verelé variety, registered in the Varietal Registry as "Riso lungo A," is distinguished by its aromatic, fragrant, black pericarp. It has a long, semi-tapered, large grain, with a narrow central pearl, pronounced dent, and rounded cross-section. Carnaroli rice, also known as the king of rice, has large, elongated grains, remarkably compact, with an unmistakable central pearl, and is perfect for creamy risottos.

Among chefs' favorite ingredients, rice is versatile in its combinations: it pairs well with vegetables, meat, fish, and fruit, and the new Origini line also inspires color combinations.

Bianco Essenziale is an organic Classic Carnaroli rice with large, elongated, and compact grains, characterized by its unmistakable central pearl; it is the most prized ingredient in great risottos. A long Italian history
The history of the Vignola company, now led by the fifth generation of the family, began in 1880 with founder Giovanni Vignola, who began processing rice and other grains typical of the Po Valley in an old mill. Thanks to passion and dedication, that old mill has transformed into a structured, cutting-edge enterprise, and each generation has committed to product research and development, remaining faithful to the concepts of tradition and quality. In 1971, Vignola began packaging rice in cardboard boxes, when everyone else still sold it loose, and in the 1980s, he was among the first to revolutionize the market with the vacuum-packaging system. Today, the company has 1,200 hectares of land cultivated with rice paddies using the organic method of green mulching. This cultivation technique aims to reduce the use of fertilizer, water, and seeds. Mulching occurs in two phases: in the fall, the rice paddy is sown with grass, a mix of grasses and crops that will grow until late spring. The grass is then removed with a roller and the rice seed is directly sown. This allows the grain to germinate under the grass layer, a process known as green mulch, which naturally inhibits weed growth.
