Why American pistachios are good for you

They're not just a convenient snack to take anywhere (even to the beach): American pistachios can enhance many dishes, making them even tastier and healthier. They're a treasure trove of heart-healthy fats, fiber that rebalances the gut and curbs hunger, vitamins and minerals that help the body replenish energy lost in the heat, and they contain a very high percentage of protein (7 grams in a 30-gram serving), particularly useful for satiating and restoring energy.

The nutritionist's opinion

"A balanced diet is essential in any situation. It's even more so for athletes, as it impacts performance, muscle repair and recovery, injury prevention, and overall health," explains Dr. Sacha Sorrentino, a nutritional biologist and expert in nutrigenetics, nutrition, and sports supplements. "Every athlete has specific nutritional needs: it's important to consider factors such as the type of sport, the intensity and duration of training, individual metabolism, and personal goals," the expert continues, explaining that even those who practice physical activity as a hobby need to pay attention to their nutrition. "A balanced diet should include a variety of nutritious foods to ensure adequate nutritional intake. Choosing whole foods, lean proteins, healthy fats, and healthy snacks allows you to maintain a steady energy intake and feel energized during physical activity," the expert suggests.

Recipes with American pistachios

Want to experiment? American Pistachio Growers, a nonprofit organization that unites American pistachio growers, has created an entire menu, from breakfast to dinner, with five dishes that once again demonstrate the versatility of these little green treasures and their precious nutritional properties. Here are the recipes, along with expert advice for each.

Breakfast: Instant Pistachio Oats

To start the day off right, it's important to eat a breakfast rich in nutrients but low in simple sugars. Instant pistachio oats are perfect because they contain all the essential nutrients. "They're a source of complex carbohydrates, fiber, protein, B vitamins, and minerals like iron and magnesium," says Sacha Sorrentino. "They provide long-lasting energy, thus preventing blood sugar spikes followed by sudden drops, making them very useful for athletes. Pistachios are also rich in copper and manganese and are a source of selenium, zinc, riboflavin, and vitamin E. Therefore, they help protect cells from oxidative stress."

150g chopped American pistachios (1 ¼ cups)

150g instant oats (1 1/2 cups)

50g raisins (⅓ cup)

30g of brown sugar (3 sachets)

2g salt (½ teaspoon)

1-Boil 3-4 cups of oats and mix with 1 cup of water for about 1-2 minutes. 2-Let cool. 2-Serve with crushed pistachios.

Snacks: American pistachio smoothies with mango, pineapple and kiwi and protein bars

The trick to making summer snacking even more enjoyable? Drink it in a nutrient-rich yet light smoothie. The American pistachio smoothie with mango, pineapple, and kiwi, suggested by American Pistachio Growers, is the solution. As Dr. Sorrentino explains, "It's a fresh and hydrating snack that promotes intestinal regularity, thanks to the pistachios and kiwi, and helps maintain stable blood sugar levels."

4 green tea bags

1 cup American pistachios, shelled and roughly chopped

1 ripe mango and 1 kiwi, peeled and chopped

¾ cup sliced ​​pineapple

4.5 tablespoons of sugar

1- Steep the green tea bags in 500 ml of boiling water for about 5 minutes. Let cool. 2- Combine the tea, sugar, pistachios, and fruit. Blend until smooth. 3- Pour the smoothies into 4 glasses, garnish with fresh fruit, and serve.

Another snack idea? Homemade protein bars. Among the many you can find on the American Pistachio Growers website, there's one with tasty dried blueberries, sweet coconut flakes, golden flaxseeds, and American pistachios.

50 g of dried blueberries

75g of untoasted coconut flakes

75g golden flax seeds

72g whey protein or your favorite vegan protein powder

230g of salted American pistachios

1 teaspoon salt

100 g of sugar

1 tablespoon vegetable oil

65 ml of water

1- In a food processor, blend the dried blueberries, coconut flakes, golden flaxseeds, whey protein, and salted pistachios for about 20 seconds. 2- In a small saucepan, combine the salt, sugar, vegetable oil, and water. Boil for 15 seconds. 3- Add the liquid ingredients to the dry ingredients and mix well. 4- Cover a baking sheet with parchment paper, pour in the mixture, and flatten it evenly. 5- Freeze for 10 minutes; the bars are then ready to eat.

Lunch: Spaghetti with American pistachio pesto and mint ricotta

A plate of spaghetti with American pistachio pesto and mint ricotta can be a deliciously complete meal. As Dr. Sorrentino explains, "Ricotta is a good source of high-quality protein, calcium, which is essential for healthy bones and teeth, and contains a variety of vitamins and minerals essential to the body. The magnesium found in pistachios also helps support the normal functioning of the nervous system."

For the mint ricotta:

Pinch of salt

Pinch of coarsely ground pepper

1 sprig mint, cut into thin strips

190 g of sheep's ricotta For the American pistachio pesto

55 g of grated Parmesan cheese

60 g of shelled American pistachios

Pinch of salt

Pinch of coarsely ground pepper

50 g of extra virgin olive oil

Half a bunch of arugula and half a bunch of parsley.

For the pasta

320 g of spaghetti

½ cup pasta water

40 g freshly grated Parmesan cheese

1-For the mint ricotta: In a bowl, combine the ricotta, salt, pepper, and mint. Set aside. 2-For the pistachio pesto: Place the herbs in a food processor along with the Parmesan, pistachios, salt, pepper, and extra virgin olive oil. Process until smooth. Remove from the food processor and mix by hand. Set aside. 3-For the spaghetti: Cook the spaghetti and drain it two minutes before serving. Pour it into a pan with 1/2 cup of the cooking water and add the pesto. Stir and serve with an additional sprinkling of Parmesan, if desired.

Dinner: Baked sea bream in a pistachio crust with cherry tomatoes and olives

"Sea bream is a source of high-quality protein and is rich in minerals such as potassium, magnesium, and selenium, which are essential for muscle function and energy metabolism and are therefore essential for athletes," confirms Sacha Sorrentino. "Most of the fats in this fish are unsaturated, which are considered good fats because they offer numerous health benefits, including protecting the heart and reducing inflammation."

Chop the cherry tomatoes into a bowl, add a pinch of oregano, a drizzle of oil for flavor, and a few olives, mixing everything together. 4-Arrange the cherry tomatoes on the baking sheet next to the sea bream fillets. 5-Bake in a preheated oven at 180°C (350°F) for 20 minutes, covering the pan with parchment paper. Then, uncovered, bake for another 10-15 minutes in fan-assisted mode until golden brown.
