Oven-roasted endive from De Worsten van Babel

De Worsten van Babel have released a cookbook! *De Worsten van Babel koken overal* is a beautiful book full of recipes, photos, and anecdotes celebrating their friendship. A brilliant recipe from the book is this oven-roasted endive. Easy, quick, few ingredients, and… minimal washing up.

The friendship of De Worsten van Babel is based on a love of food and fun in the kitchen. Because that is, first and foremost, what cooking is all about, they believe. So don't expect recipes in their cookbook that you have to follow to the gram, but rather recipes that encourage fun in the kitchen and culinary experimentation.

De Worsten: “We consider endive an underrated vegetable, because it is actually only ever mashed into a stew or fed to guinea pigs. But you can do so much with it. You can steam it, bake it, boil it, grill it, eat it raw, and it retains that bite and bitterness. Plus, it is a local vegetable, so it scores well on the sustainability ladder too.”

Oven-roasted endive

Heat the oven to 180 °C.

Cut the endive into quarters. Place the quarters in an oven dish with the white wine and butter. Bake for 30 minutes.

Chop and toast the walnuts.

Remove the endive from the oven and garnish with the walnuts and some liquid from the baking dish.
