Meatballs with spaghetti and tomato-pepper sauce

- 4 pcs red pepper
- 250 g cherry tomatoes
- 5 cloves garlic
- oregano
- 4 tbsp olive oil
- 1 onion
- 1 piece celery stalk
- 1 piece carrot
- 250 ml vegetable broth
- 500 g spaghetti (pasta)
- 4 slices toast bread
- 500 g minced meat (mix of beef and pork)
- 1 clove garlic
- 3 sprigs of oregano
- 1 egg

- Preheat the oven (preferably fan-forced) to 180°C. Mix the peppers, tomatoes, garlic, dried oregano, salt and pepper with 2-3 tablespoons of oil. Place in a single layer on a baking sheet lined with baking paper and bake for about 30 minutes until the peppers and tomatoes start to darken. Stir during baking.
- Meanwhile, make the balls. Drizzle the toast with milk and place in a bowl. Add the meat, salt, pepper, garlic, torn oregano leaves and egg. Mix well and form into walnut-sized balls. Place them in a shallow baking dish lined with baking paper or greased with oil and place in the oven with the peppers. Bake until golden brown.
- Heat a tablespoon of oil in a pot and fry the chopped onion, celery and carrot until the vegetables are translucent. Remove the baking sheet with the peppers, tomatoes and garlic from the oven. Squeeze the garlic from the skin and add it to the pot together with the peppers and tomatoes. Pour in the stock, bring to the boil and let it bubble for a few minutes. Then blend (for a sauce without skins, you can also strain or rub through a sieve). Season with salt, pepper, vinegar or sugar if necessary.
- Cook the spaghetti to your liking. Mix the hot spaghetti with the sauce, place the balls on top and sprinkle with oregano leaves. ADDITIONAL RECIPE: SNACK MUFFINS Mix the remaining cold spaghetti with the sauce, 2 beaten eggs and a little grated Parmesan. Roll the spaghetti into nests and place in greased muffin tins. Press a ball into each nest. Sprinkle generously with grated Parmesan. Bake in the oven at 180 °C for 20 minutes. Let cool in the tin for 5 minutes and then remove.
Baking is a brilliant way to give yesterday's food another chance and transform it into something new and tempting. While no one wants reheated spaghetti, they're a hit in the form of golden spaghetti cake or muffins in your hand - even when cold.
