Cheese dumplings à la fondue

In a saucepan, bring the milk with the sugar, cinnamon, cocoa and orange juice to the boil, then set aside immediately. Add the chopped chocolate and stir until smooth. Add a few drops of brandy and garnish with a few orange peel noodles.

Ingredients · Servings For 4–6 people
  • 500 g soft cottage cheese
  • 2 eggs
  • 25 g caster sugar
  • 8 g vanilla sugar
  • 1 pinch salt
  • 70 g breadcrumbs
  • 70 g semolina flour
  • 200 ml milk
  • 25 g caster sugar
  • cinnamon
  • 3 tbsp Dutch-style cocoa
  • 225 g dark chocolate
Method · 1 h 15 min
  1. Blend the cottage cheese, eggs, both sugars, finely grated orange zest from the larger part of the orange and a pinch of salt until smooth. Then mix the breadcrumbs and semolina and stir this mixture into the seasoned cottage cheese. Cover and set aside in the refrigerator for 45 minutes. In the meantime, bring a pot of water to a boil and salt it.
  2. With wet hands, shape about 20–25 round dumplings, about 3cm in diameter. Cook slowly in boiling salted water for about 10 minutes until the dumplings float to the surface. Test one and if it is done inside, remove all of them with a slotted spoon. Let drain.
  3. In a saucepan, bring the milk with the sugar, cinnamon, cocoa and orange juice to the boil, then set aside immediately. Add the chopped chocolate and stir until smooth. Add a few drops of brandy and garnish with a few orange peel nuggets. Serve in a (chocolate) fondue pot and dip the dumplings in the heated sauce with fondue forks. You can also coat them in powdered sugar mixed with ground cinnamon. SOMETHING EXTRA If the sauce seems too thin after mixing in the chocolate, add more chocolate or thicken it with starch. Mix about 1/2 tablespoon of cornstarch with a little water to make a slurry, then stir this into the sauce and heat briefly over low heat.
