  • 1 cup red beans

  • 1 kg cabbage
  • 1 kg sweet potatoes
  • 1 kg pumpkin
  • carrot
  • 1 kg pork
  • 1 kg tomato
  • 2 tsp vinegar
  • pepper
  • 2 pcs bay leaves
Método · 2 h 30 min
  1. It is best to soak the corn and beans overnight in cold water.
  2. The next day, cook the legumes and set aside to drain.
  3. Heat the olive oil in a pan and fry the chopped onion and garlic, then add the drained beans and corn.
  4. Once the legumes are soft, transfer them and the rest of the pan to a large pot. Add the chopped cabbage, carrots, pumpkin, sweet potatoes, broth, and enough water to cover everything. Bring to a boil.
  5. Meanwhile, fry the pork and tomatoes in a pan. Add two teaspoons of vinegar. Season with salt and pepper to taste. Pour into the pot with the legumes and add two bay leaves.
  6. Cook everything together for about half an hour until the flavors come together. Let it rest for a while and then serve with fried chorizo.
