Chicken thighs with sweet potatoes and beets from one baking dish

This unusual recipe is sure to delight you with its 'one-pot' concept and the fact that it doesn't require any less common ingredients - chicken thighs, sweet potatoes and beetroot are all commonly available in supermarkets. Chicken Thighs with Sweet Potatoes and Beets from One Pot will be a hit with your whole family.

Ingredients · Servings For 4 people
  • 150 g mascarpone
  • 1 clove garlic
  • 2 pieces lemon
  • 2 tbsp coarse mustard
  • 3 PL with
  • 100 ml white wine
  • 4 pieces of chicken thighs
  • 500 g beetroot
  • 400 g sweet potatoes
  • 2 handfuls baby spinach
  • 1 bunch of dill
Method · 1 h
  1. Preheat the oven to 180 °C. In a bowl, mix the mascarpone, garlic and lemon zest and season well with salt and pepper.
  2. In another bowl, mix the lemon juice with the mustard honey and wine. Cut each piece of chicken into small pieces where it is thickest and fill with the seasoned mascarpone. Place them in a single layer in a large baking dish or deep baking tray (you can line it with baking paper), spread the beetroot and sweet potatoes around, then sprinkle with the honey-wine mixture and a little olive oil. Season with salt and pepper. Bake for about 40 minutes until the chicken is cooked through and the vegetables are just tender. Serve sprinkled with baby spinach and dill.
