Steak with tomato and mango salad
A simple salad based on the following ingredients: juicy tomatoes, perfectly ripe mango and high-quality aged beef.

- 60 ml soy sauce
- 1 tbsp fish sauce
- 2 tbsp lime juice
- 2 tbsp coconut sugar
- 1 clove garlic
- ginger (fresh)
- 60 ml peanut oil
- 500 g beef belly
- 500 g cherry tomatoes
- 2 ks mango
- 1 shallot
- 1 handful of arugula
- 1 tbsp white wine vinegar
- 3 tbsp olive oil
- 1 handful basil

- Mix soy sauce, fish sauce and lime juice in a bowl. Add sugar and stir until dissolved. Add garlic, ginger and pepper and stir in oil. Place steak in marinade, close and leave to marinate at room temperature for an hour.
- For the salad, cut the tomatoes in half and slice the mango. For the dressing, whisk the vinegar and oil together and season with lime juice, sugar and salt.
- Heat a grill pan, remove the steak from the marinade and pat dry with paper towels. Sear the steak on both sides for 2-3 minutes for medium doneness. Then set aside, cover, and let rest and marinate for a while.
- Mix tomatoes, mango, shallots, rocket, drizzle with dressing and sprinkle with basil. Thinly slice steak and add to salad.
