Fish in coconut breadcrumbs with pineapple salsa
A dish that you can break down into components: pineapple salsa can be served with shrimp or chicken, rice with practically everything – it goes well with spicy Jamaican jerk chicken or teriyaki sauce, for example. But try it all together with fish first, it's a great combination.

- 1 cup jasmine rice
- 1 can coconut milk
- 1 pinch of granulated sugar
- 1 pc lemongrass
- 4 fillets of white fish
- 1 tsp curry powder
- 100 g plain wheat flour
- 2 eggs
- 1 cup panko breadcrumbs
- 1 cup grated coconut
- pineapple

- 1 tbsp lime juice
- 1 avocado
- 1 handful fresh coriander

- For the coconut rice, pour the rice into a saucepan, pour in the coconut milk and fill the milk can with water and add to the pot. Add salt, a pinch of sugar and crushed pieces of lemongrass if using. Bring to the boil and stir occasionally to prevent the rice from sticking. Then reduce the heat to low, cover and cook slowly for about 20 minutes. Uncover, fluff with a fork, cover and leave to stand covered for another 5 minutes before serving.
- While the rice is cooking, prepare the fish. Season the fillets with salt and pepper and sprinkle with lime juice. Mix the curry powder with plain flour in another bowl, add the beaten salted eggs and in the last bowl, mix the panko breadcrumbs and coconut. Coat the fish first in the flour, then in the beaten eggs and finally in the coconut breadcrumbs.
- Heat a generous amount of oil in a saucepan and fry the fillets until golden brown, about 4 minutes on each side. Remove and place on a plate lined with paper towels to drain any excess fat.
- Mix all the ingredients for the salsa and set aside.
- Cut the avocado in half, remove the pit and scoop out the flesh. Mash and mix with lime juice, salt, pepper and coriander (or blend if you want a completely smooth sauce). Add a little water if you want a thinner consistency.
- Place rice on a plate and sprinkle salsa over the fish portion and serve with avocado sauce.
