Puff pastry rolls with minced turkey
Savory puff pastry snacks are always a hit at any party. Try wrapping spicy minced meat rolls in the dough this time. They will disappear from the table as if by magic.
Ingredients · Servings For 12 pieces
- 500 g minced turkey meat
- 50 g breadcrumbs
- 2 eggs
- 1 handful parsley
- 1 tbsp olive oil
- 1 red onion
- 2 cloves garlic
- dried chili
- 2 tsp oregano
- 2 pcs puff pastry
- 1 handful sesame seeds

- For the meat filling, put the minced meat, breadcrumbs, 1 egg, parsley leaves and lemon zest in a bowl.
- Heat the olive oil in a pan and fry the onion over low heat until translucent. Add the garlic, chilli and oregano and fry for another 2 minutes until the garlic and spices are fragrant. Set aside and let cool.
- Add the onion, garlic and spice mixture to the meat and mix well with your hands.
- Preheat the oven to 190°C (fan 170°C) and start making rolls. Unroll the puff pastry and cut each sheet into two long, narrow rectangles – you will only use three for the rolls, save the remaining sheet for another use (for example, for cheese sticks with bacon). Place the rectangle of dough on the work surface with the longer side facing you. Divide the meat filling into three parts. Spread a third of the filling in a strip in the centre of one of the rectangles of dough. Brush the edge of the far long side of the rectangle with beaten egg. Lift the closer side of the dough and roll towards the greased edge. Turn the resulting roll seam-side down. Repeat with the remaining dough and filling. Use a serrated knife to cut each roll into four equal parts – rolls.
- Place the rolls on a baking sheet lined with baking paper and brush with the remaining beaten egg and sprinkle with the sesame seed mixture.
- Bake for 25 minutes or until the pieces are golden and the filling is fully cooked. Let cool slightly before serving. SOMETHING EXTRA The rolls are also delicious with ground lamb, replacing the flat-leaf parsley with chopped mint. Recipe and photos taken from Olive Magazine.
