Spicy noodles with shiitake mushrooms and broccoli
Shiitake mushrooms add a "meaty" texture and flavor to this healthy and quick meal. The broccoli is beautifully crunchy, and for an even crunchier experience, it's accompanied by cashews.

- 500 ml vegetable broth
- 2 servings of noodles
- 1 head of broccoli
- 1 tbsp sesame oil
- 250 g mushrooms
- 1 clove garlic
- dried chili
- 4 pcs spring onions
- 2 tbsp hoisin sauce
- 1 handful of cashews

- Cook the noodles in vegetable broth for about 2 minutes. You can also use a low-salt vegetable stock cube for this purpose.
- Then add the broccoli to the pot and cook for another 2 minutes.
- Save a cup of the broth and set aside the rest of the liquid from the noodles and broccoli.
- Heat a frying pan or wok well and pour in the sesame oil.
- Add the mushrooms and fry for about 2 minutes until golden brown.
- Then add the garlic, chili flakes and the white part of the spring onion – fry for another minute and then add the cooked noodles and broccoli.
- Add 3 tablespoons of broth and hoisin sauce and use tongs or wooden chopsticks to stir the noodles for about another minute.
- Serve the noodles sprinkled with dry roasted cashews and remaining spring onions. You can add a little more sesame oil to taste. Source: BBC Good Food
