Burbero, Boer and Perilli's wine bar, opens in Milan

It's called Burbero, the new wine bar and restaurant designed by Eugenio Boer and Carlotta Perilli. Located at Via delle Pioppette 3, this 40-square-meter location expands the [Bu:r] universe with an informal menu dedicated to wine, small producers, and conviviality.

A new chapter for Boer and Perilli

After eight years of [Bu:r], the restaurant on Via Mercalli, chef Eugenio Boer and maître d' Carlotta Perilli are opening a second location in Milan with a completely different feel. Called Burbero, it opens at Via delle Pioppette 3, in the historic heart of the city, as a cozy space of just 40 square meters designed for a spontaneous, informal experience. The name itself captures the project's identity: a reserved and rugged appearance that, once you get past the initial impression, gives way to a generous and welcoming character. This dual spirit permeates every aspect of the restaurant, from the kitchen to the service to the spatial design, defining a place capable of combining personality and human warmth in a much more intimate format than the reference restaurant.

Wine, conviviality and the chef's iconic dishes

At the heart of Burbero's offering is wine, the protagonist of a selection designed to showcase regions, winemakers, and stories through labels from small producers. Alongside the glasses, there's space for artisanal cured meats and cheeses, seasonal ingredients, and dishes designed for sharing, in a simple yet meticulously crafted gastronomic approach. Some of Eugenio Boer's most iconic creations, such as the celebrated pigeon macaron, are also featured, alongside more informal options for aperitifs or quick dinners. The result is a menu that showcases the finest ingredients and the pleasure of dining, while maintaining a clear connection to the gastronomic identity built over the years by Boer and Perilli at [Bu:r].

A tailor-made architectural project

Burbero's space bears the signature of KICK.OFFICE, which translated the venue's dual personality into architecture through materials such as resin, stainless steel, and marble, creating a contemporary atmosphere with a strong character. The central counter becomes the true fulcrum of the room, the point where cuisine, service, and guest interaction intertwine, transforming Burbero into a sort of chef's table where the preparation of dishes is part of the experience. Among the distinctive features is the wall dedicated to labels, custom-designed and inspired by historic Milanese wine shops, which becomes an integral part of the venue's wine story.
