Pobre Juan Brasília hosts a dinner featuring Jamón Joselito Vintage, Tempos Vega Sicilia wines, and the presence of a Spanish master jamón maker
The Joyas a la Mesa dinner will take place on September 25th at ParkShopping, featuring a tasting of two Iberian hams, a menu created by chef Geraldo Ribeiro, and a live cutting of a ham that has been cured for over 96 months.
Brasilia will be one of six Brazilian cities to host, in September, the Joyas a la Mesa dinner series, held by Pobre Juan in partnership with the Spanish company Joselito and with Tempos Vega Sicilia wines. In the federal capital, the dinner will take place on September 25th at the Pobre Juan location in ParkShopping, featuring the rare Jamón Joselito Vintage, aged for over 96 months, the Joselito Gran Reserva, a menu created by chef Geraldo Ribeiro, and a selection of five wines.
This occasion marks a rare opportunity to bring together Joselito hams and wines from the Tempos Vega Sicilia universe at a single dinner in Brazil. The evening will also feature the presence of Raquel Acosta, a Spanish master ham maker, who will be responsible for manually cutting the ham in front of the guests, and Jesús García, Global Commercial Director of Joselito.
Produced by Joselito, a Spanish company founded in 1868 in Guijuelo, Salamanca, Iberian ham is the result of a process that involves origin, feed, curing time, and preparation. Jamón Joselito Vintage stands out for its long maturation period, with pieces that undergo 96 months or more of curing, a characteristic that makes it a rare product even among the great Iberian hams.
The story begins in the Spanish dehesa, a typical Iberian Peninsula landscape made up of open fields and scattered trees. During the montanera, the final fattening period for the animals, Iberian pata negra pigs roam freely throughout the region and rely heavily on bellotas, the fruit of holm oaks, as part of their diet. The climate, the territory, the diet, and the long curing process all contribute to the unique characteristics of each piece of wood.
Before the Vintage presentation, guests will be able to taste the Joselito Gran Reserva, aged for 48 months or more. Like the Vintage, this product is 100% natural, without additives or preservatives. The tasting aims to showcase two different stages of Joselito's aging process, allowing guests to appreciate the unique characteristics of each wine.
The manual slicing will play a central role in the evening. Performed by master jamón maker Raquel Acosta, the procedure considers aspects such as thickness, shine, temperature, and fat content of each slice. The presentation will be made in front of the guests, allowing them to closely observe a fundamental step in serving the jamón.
To accompany the hams, chef Geraldo Ribeiro has created a menu that begins with a selection of Spanish items, followed by an Iberian ham salad and culminating in a tasting of Gran Reserva and Vintage hams. The main course will be Bife Pobre Juan, served with Jamón Risotto and Guanciale, followed by traditional Churros with Dulce de Leche.
The wine selection spans different regions and styles. Among the labels are Oremus Mandolás 2023, Macán Clásico 2021, Alión 2021, Pintia 2020 and Oremus Tokaji Late Harvest 2020, belonging to the Tempos Vega Sicilia group, which includes wines from Rioja, Ribera del Duero, Toro and Tokaj, in Hungary.
Pobre Juan is the only restaurant in Brazil to offer Jamón Joselito on its menu. In Brasília, the dinner at ParkShopping is part of the national Joyas a la Mesa program, bringing the public of the capital closer to a Spanish gastronomic tradition marked by its aging time, the origin of the products, and the precision of its preparation.
