Okimoru y NoriFish, ambos restaurantes galardonados con estrellas Michelin, se unen a Ponce City Market en Atlanta

Ponce City Market makes public NoriFish, a sushi concept offering fresh seafood sourced from Tokyo’s Toyosu Fish Market, and Okiboru, a ramen and tsukemen spot recognized by MICHELIN as a Bib Gourmand award winner, will open in the Central Food Hall on Friday, August 28.

The beloved, chef-driven concepts are both from Atlanta locals Sean Park, a formally trained sushi chef with 15 years of experience in traditional sushi making and Japanese cuisine, and ramen-obsessed restaurateur Justin Lim. At NoriFish, Chef Park emphasizes precision, bold taste and craftsmanship, with menu items rotating based on season and availability. A tightly curated menu crafted specifically for the new Ponce City Market restaurant will feature made-to-order hand rolls, signature sushi rolls built to be fully seasoned, sauce-balanced, and craveable, along with a selection of Japanese small plates.

The beverage program, backed by Atlanta mixologist and certified sake advisor Hendry Kurniawan, will offer light and refreshing craft cocktails, approachable house and premium sake, select local and Japanese lagers, and crisp wines. Founded by Chef Park in 2022 as a personal expression of his culinary philosophy, NoriFish has become an Atlanta sushi staple with other locations in Buckhead and Sandy Springs.

Co-founded by Chef Park and Lim and originally opened in 2018 in Los Angeles, Okiboru is a traditional ramen and tsukemen (dipping noodles) concept that has been named a MICHELIN Bib Gourmand award winner. The Ponce City Market outpost will have a focused menu anchored by tsukemen and ramen with collagen-rich broths and house-made noodles, plus appetizers and rice dishes.

To drink, guests can expect cocktails, versatile sake options, a selection of lagers and clean craft beers, and NA options, including teas and soft drinks. Centered around depth, consistency, and craftsmanship, Okiboru is the result of Lim’s extensive ramen exploration across Japan, paired with Park’s culinary discipline and operational expertise.

The concept as well has locations in Sandy Springs, Buckhead, Duluth, and Buford, Georgia, and three locations in New York. Together, NoriFish and Okiboru represent a modern interpretation of Japanese dining – one that honors tradition and pushes taste forward.

NoriFish and Okiboru are designed to reflect the brands’ core values: integrity, discipline, and an uncompromising commitment to quality. “I’ve always believed you can respect Japanese tradition while still finding ways to make it your own,” explains Co-founder & Chef Sean Park. “That’s really what these two concepts represent.
