Halloween potato chips (baked sweet potato and russet)

Halloween potato chips (baked sweet potato and russet)

These Halloween Potato Chips are the spooky snack your fall spread has been waiting for. Russet and orange sweet potatoes are sliced thin, cut into festive Halloween shapes with cookie cutters, then baked until crisp and finished with a warm pumpkin spice and cinnamon sugar topping.

Ingredients · Servings 40 chips
  • 2 large russet potatoes
  • 2 medium orange sweet potatoes
  • 3 tablespoons neutral oil, such as avocado or vegetable oil
  • 1 tablespoon pumpkin spice
  • ½ teaspoon kosher salt
  • 3 tablespoons granulated sugar
  • ½ teaspoon cinnamon
Method · 45 min
  1. Preheat the oven to 350˚F (180˚C). Line 2 large baking sheets with parchment paper.
  2. Scrub the russet and sweet potatoes thoroughly and pat dry. Using a mandoline or very sharp knife, slice the potatoes lengthwise into ⅛-inch-thick slices. Keep the slices as large and uniform as possible so there is enough surface area for the cookie cutters.
  3. Use small Halloween cookie cutters — pumpkin shapes work well for the sweet potatoes and ghost shapes for the russet potatoes — to punch shapes from the potato slices. Press the cutter firmly through each slice, then carefully remove the excess potato around the shape. Save the scraps for another use.
  4. Arrange the potato shapes in a single layer on a clean kitchen towel or paper towels. Gently pat both sides dry to remove as much surface moisture as possible.
  5. Arrange the potato shapes in a single layer on the prepared baking sheets, making sure they do not overlap. Drizzle with the oil, then sprinkle with the pumpkin spice and salt.
  6. Bake for 25 minutes, flipping the chips halfway through, until the edges are crisp and the centers are dry.
  7. While the chips bake, make the cinnamon sugar: in a small bowl, stir together the granulated sugar and cinnamon. Set aside.
  8. Remove the chips from the oven and immediately transfer them to a wire rack. Lightly sprinkle with the cinnamon sugar and let cool completely, about 5 minutes, until crisp. Serve immediately, or store in an airtight container at room temperature for up to 2 days.
  9. Enjoy!

They're a fun, crowd-pleasing treat to make with kids or bring to a Halloween party, and they come together with just a handful of pantry ingredients. Bonus: They store well, so you can make a batch ahead and have them ready before the festivities begin.
