  2. Heat the mixture over medium heat and simmer, stirring constantly, until it thickens to a creamy consistency.

When the mornings become noticeably cooler in autumn, getting up is often harder than in summer. It's precisely during this transitional season that a warm breakfast has its full effect. A steaming bowl of freshly cooked pumpkin and cinnamon porridge for cool autumn days chases away the morning chill in no time and makes starting the day much more pleasant. It's a small ritual that brings coziness to the breakfast table and warms you from the inside out.

Pumpkin and cinnamon porridge for a golden start to the day

In many food cultures around the world, a warm meal in the morning is a natural part of everyday life. Whether it's Asian rice soup or British porridge, the principle remains the same. Cooked grain dishes are pleasantly filling and easy on the stomach. Oatmeal is particularly well-suited for this type of preparation. You only need a few minutes at the stove, but the result is a complete meal that will keep you going well through the morning.

This porridge gets its autumnal touch from the addition of smooth pumpkin puree. It not only gives the porridge a vibrant golden yellow color but also makes the texture even more velvety. Together with cinnamon and a touch of vanilla extract, it creates a familiar, warming aroma. A small but crucial step is the pinch of salt in the pot. It accentuates the sweet components, such as the honey, and rounds out the flavor of the spices. For those who prefer to avoid animal products, simply substitute oat milk for the cow's milk. Maple syrup replaces the honey and adds a delicate caramel note that pairs perfectly with the pumpkin.

A truly good porridge thrives on the contrast of textures. The soft, warm base calls for a crunchy counterpart. This is where roasted pecans come in. Briefly toasting them intensifies their nutty flavor and provides the necessary crunch. Fresh pomegranate seeds add a fruity element. Their tangy freshness perfectly balances the sweet, rich pumpkin cream. Each spoonful becomes a harmonious blend of creamy, crunchy, and fruity.

The beauty of this recipe lies in its incredible adaptability. Depending on what you have on hand and the season, you can constantly reinvent the toppings. Walnuts or almonds are an excellent alternative to pecans. If you don't have a pomegranate, simply slice up some fresh figs or briefly caramelize a few pear wedges in a pan. Diced apples or a handful of dried cranberries also add a perfect aromatic touch to the colder months. This way, your breakfast never gets boring, and you can enjoy a cozy bowl of porridge in ever-changing variations all autumn long.
