Lemon-marinated red cabbage: the restaurant secret to softening it in just two hours

Lemon-marinated red cabbage: the restaurant secret to softening it in just two hours

Looking for a fresh, light yet flavorful side dish that can complement your main courses without weighing you down? Raw side dishes are often difficult to chew and a bit boring, but the solution to a delicious meal is simpler than you think: lemon-marinated red cabbage.

Ingredients · Servings 4
  • Red cabbage 500 gr
  • Organic lemons 2
  • Extra virgin olive oil (EVO) 4 tablespoons
  • Honey or brown sugar 1 tablespoon
  • Fine salt
  • Ground black pepper
  • Shelled walnuts optional
Method · 15 min
  1. Rinse the red cabbage thoroughly under running water and remove any tough or damaged outer leaves. Cut the cabbage in half, remove the white, leathery core, and then slice it into very thin strips using a sharp knife or, even better, a mandolin. Transfer everything to a large bowl. Squeeze the two lemons and strain the juice to remove any seeds.
  2. Prepare the marinade: In a small bowl, combine the lemon juice, extra virgin olive oil, honey (or sugar), a generous pinch of salt, and pepper. Stir vigorously with a fork (or shake the mixture in a closed glass jar) until smooth. Pour the marinade directly onto the sliced red cabbage. Gently massage the cabbage with clean hands (or stir vigorously with two spoons) for a couple of minutes. This step is crucial: it will help the dressing penetrate and soften the cabbage.
  3. Cover the bowl with plastic wrap and let it rest in the refrigerator for at least 2 hours (the longer it rests, the softer and tastier it will become). Shell the walnuts and chop them into fine crumbs (if you haven't already). Just before serving, remove the salad from the refrigerator, give it a stir, and garnish the top with the chopped walnuts and a few whole walnuts.

Looking for a fresh, light yet flavorful side dish that can complement your main courses without weighing you down? Raw side dishes are often difficult to chew and a bit boring, but the solution to a delicious meal is simpler than you think: lemon-marinated red cabbage. Thanks to this foolproof technique, the normally tough leaves become soft and incredibly digestible, maintaining a delicious crunch. The citrus-based marinade and hint of sweetness create an irresistible contrast.
