  • 2 red peppers
  • 80 g diced ham bacon
  • 1 tsp smoked paprika powder
  • 2 tbsp tomato paste
  • 400 ml beef broth
  • 400g diced canned tomatoes
  • 2 sprigs of thyme

  • Salt
  • Pfeffer
  • Cornstarch (optional)
  • Vegetable oil (for frying)
  • Parsley (for serving)
Method · 30 min
  1. Peel the onion and garlic, dice the onion and finely chop the garlic. Remove the core and seeds from the bell peppers and cut them into strips. Cut the sausages into bite-sized pieces.
  2. Heat a little oil in a large pot, add bacon, onion, and garlic, and sauté for about 1-2 minutes. Then add bell peppers and sausages and sauté for another 1-2 minutes. Add paprika and tomato paste and continue to sauté for a few more minutes.
  3. Deglaze with broth and add the canned tomatoes. Then add thyme sprigs and simmer for about 20 minutes with the lid partially closed.
  4. Remove the thyme, stir in a tablespoon of crème fraîche, and season with salt and pepper. If necessary, thicken with a mixture of cornstarch and water, then bring back to a boil. Serve with more crème fraîche, parsley, and your favorite side dishes.

Quick, affordable, and a true classic that the whole family loves! Sausage goulash is a stew that guarantees warmth and comfort in every spoonful. Not just for the colder months, but also perfect for rainy days, it's a real evergreen dish that evokes nostalgic childhood memories. If you're making it for children, you can replace the smoked paprika with sweet paprika to make the flavor less smoky. If you'd like it a bit spicier, add some extra chili flakes. And what's a must? A dollop of crème fraîche at the end makes the sausage goulash extra creamy! Pair the goulash with your favorite sides like buttery noodles, boiled potatoes, mashed potatoes, spaetzle, rice, dumplings, or fresh bread.

How do you make sausage goulash?

Finely chop the onions and garlic, cut the bell peppers into strips and the sausages into slices. In a large pot, sauté the bacon, onions, and garlic, then add the bell peppers and sausages. Sauté the paprika and tomato paste briefly, then deglaze with broth. Add the chopped tomatoes and thyme, and simmer for 20 minutes. Finally, stir in the crème fraîche and season to taste.

Which sausages are best for sausage goulash?

Spicy sausages like Bockwurst, Vienna sausages, Debreziner, or bratwurst are best. Their savory aroma gives the goulash a robust flavor. You can also mix several types of sausage for an interesting variety of tastes.

What do you eat with sausage goulash?

Sausage goulash goes well with side dishes such as noodles, boiled potatoes, mashed potatoes, spaetzle, rice, bread dumplings, and fresh bread, like a baguette. You can also serve it with a crisp salad.

Can sausage goulash also be prepared vegetarian or vegan?

Yes! You can replace the bacon with smoked tofu or omit it entirely. A vegetarian or vegan sausage substitute is the best alternative to the sausages.
