Extra virgin olive oil. It's the best option for its flavor and nutritional benefits, but if you don't have it, you can use any other oil, such as sunflower, corn, or even coconut oil, although the flavor will be different.

Cabbage. You can easily find it in any supermarket or greengrocer. If you don't like it or can't find it, you can use any other vegetable, such as zucchini, chard, or spinach. In general, you can substitute the vegetables with whichever ones you like best or have on hand.

Vegetable broth. The broth gives the soup a lot of flavor, but if you don't have any, you can also use water, although keep in mind that the soup won't be as tasty and you'll have to add more salt.

How to prepare vegetable soup

Step 1. Heat the oil in a large pot over medium-high heat. Add the vegetables and sauté for 5-10 minutes, stirring occasionally.

Step 2. Add the stock and salt, stir well and, when it boils, cook over medium heat with the lid on for 10-15 minutes, until the vegetables are tender.

It can be kept for 3 to 4 days in the refrigerator, as long as it is stored in an airtight container.

Can I freeze it?

Yes, it freezes perfectly! Just make sure to let it cool completely before storing it in an airtight container or freezer bags. It will keep for up to 3 months in the freezer.

How can I reheat it?

If it's in the refrigerator: simply heat it over medium heat in a saucepan, stirring occasionally, until piping hot. You can also use a microwave, heating it in 2- to 3-minute intervals, depending on the quantity. If it's in the freezer: ideally, let it thaw in the refrigerator for a few hours or overnight. Once thawed, you can heat it in a saucepan over medium heat, stirring occasionally, or in the microwave, heating it in 1- to 2-minute intervals and stirring between each interval. If you're in a hurry, you can also heat it straight from the freezer, but over low heat and for a longer time to prevent burning.
