Girls in Boots, the table at a guesthouse in Saint-Georges-de-Reintembault
Lénaïck Geffroy and Louise Lefèbvre run a bucolic guesthouse where the food is served next to the wood stove, under a roof of dried flowers.
Both are deeply rooted in their land. Lénaïck Geffroy, formerly at Bierbuik and Le Nessay, runs the kitchen, while Louise Lefèbvre, formerly at Jardins de la Matz, manages the service and the vegetable garden. Together they look after the house, the vegetable garden, and the rustic guest table.
The menu combines cooked red beets, raw Chioggia beets, and ricotta drizzled with cranberry coulis. Next comes a delicate Provençal beef, which can also be ordered with Jerusalem artichoke for a vegetarian option, accompanied by melt-in-the-mouth ravioli filled with ricotta, onions, carrots, and herbs.
For dessert, there's a meringue creation with buckwheat, lemon, and dulse seaweed, with a hazelnut flavor. On other occasions, the table has served squid and onion tempura with gribiche sauce and a bitter salad, or spinach, turnips, and polenta with turnip leaf pesto and a flavorful jus.
The selection of local drinks, both alcoholic and non-alcoholic, is equally carefully curated: kir with homemade citrus and tonka bean syrup, Médithévin flower lemonade, a Hanami Saumur-Champigny from Bobinet, or an Apremont from Domaine des 13 Lunes. Between the wood-burning stove and Paco, the house dog, the room has a cozy atmosphere.
