Method · 30 min
  1. Prepare the ingredients. Peel the onion. Wash and dry the eggplant, zucchini, and pepper. Cut the vegetables into randomly shaped slices or small cubes.
  2. Wash the potatoes thoroughly and, without peeling them, cut into wedges. Peel and slice the fennel. Place a 24–26 cm heavy-bottomed frying pan over medium heat and heat until hot.
  3. Fry the onion, potato, eggplant, zucchini, and bell pepper one at a time, adding oil as needed. Place the cooked vegetables on a plate and keep in a warm place until serving. The fennel can also be fried or quickly grilled.
  4. Separate the basil leaves from the stems. Dice the cheese. Tear the lettuce leaves. Halve the cherry tomatoes. Combine them with the cheese and lettuce leaves in a large bowl.
  5. Add all the fried vegetables. Season with salt and pepper, and squeeze the lime juice directly from the lime halves. Stir gently. Sprinkle with sesame seeds and garnish with basil.
