Chicken Breast: All the Tricks to Make It Tender

How do you tenderize chicken and serve it with tender, juicy meat, without risking the "soil effect"? There's more than one secret: choosing the right cut, preparing it correctly, not overcooking it, and, when necessary, using a marinade.

How to tenderize chicken: 5 basic rules

Tenderizing chicken isn't difficult, just follow these 5 tips:

  • Choose the right cut: the breast is very lean and therefore more susceptible to overcooking. Thighs, on the other hand, contain more connective tissue and fat and lend themselves well to longer, more delicate cooking.
  • marinate when needed;
  • avoid excessive temperatures;
  • check your core temperature;
  • let the meat rest before cutting it.

Why does chicken become dry?

Chicken, especially the breast, is a lean cut and contains little fat. The main risk during cooking is therefore losing too much water: excessive temperatures and excessive cooking times can dry out the fibers and make them more compact. Therefore, in addition to the chosen cooking technique, it's important to monitor the cooking process and avoid overcooking.

Marinating the chicken

One of the most effective ways to prepare a tender chicken breast is definitely to marinate the meat before cooking.

Marinating involves immersing ingredients in a solution made up of an acidic component (e.g., citrus fruits or wine), a fatty component (e.g., oil or milk), and an aromatic component (herbs and spices). Its purpose is to soften the fibers—depending on the marinade's acidity—flavor and keep the meat moist, which is essential for achieving a tender texture.

The choice of marinade is entirely a matter of taste: for chicken, a classic marinade with lemon juice, extra virgin olive oil, garlic cloves, salt, and pepper is perfect. Spices and herbs, such as rosemary, thyme, sage, oregano, paprika, curry, and so on, are a must. The possibilities, however, are endless: among the most successful marinades for chicken are soy sauce or yogurt.

Completely submerge the chicken breast in the marinade, seal the container, and let it rest in the refrigerator. The ideal marinade time for chicken is a minimum of 2 hours and a maximum of about 4 hours. Before cooking, remove the chicken from the refrigerator, let it sit at room temperature for 15 minutes, remove it from the marinade (which you should discard), and cook according to your chosen recipe. Marinating is useful for any type of cooking: pan-fried, baked, or fried, the result will be incredibly tender.

How to cook chicken so it stays tender

Among the best methods for tenderizing meat are various types of baking, such as en papillote, salt-baked, or steamed, which are also suitable for chicken thighs. These techniques have a dual advantage: they allow the ingredients to preserve their flavors and organoleptic characteristics while maintaining a tender texture. The chicken, protected by the parchment paper, aluminum foil, or salt crust, absorbs both the moisture and the flavorings, cooking at a constant temperature without the need for added fat.

You can replicate similar conditions in a pan by covering it with a lid during cooking. If you have a kitchen thermometer, measure the internal temperature of the whole chicken breast to avoid overcooking it: as soon as it reaches 74°C, you can turn off the heat.

After cooking, the secret to tenderizing chicken breast is to cover it with foil for 5-10 minutes before serving or cutting it: this way, the juices won't leak out, but will be distributed evenly throughout the chicken.
