A Mediterranean delicacy

A delicious and authentic recipe, made even more flavorful by the addition of a few drops of Balsamic Vinegar of Modena, one of the most famous and beloved Italian specialties in the world.
Savory pie with cherry tomatoes, olives and mozzarella
Ingredients for 1 cake For the pastry 250 g 00 flour 125 g butter 1 egg salt and pepper.
For the filling 600 g yellow and red cherry tomatoes 250 g mozzarella 200 g fresh cream 100 g pitted olives 3 tablespoons of Mazzetti Etichetta Gialla balsamic vinegar 3 eggs 2 tablespoons of extra virgin olive oil salt and pepper.
For the basil sauce 4 tablespoons of extra virgin olive oil 1 bunch of basil Balsamic vinegar Yellow Label bunches salt and pepper.
Method: Prepare the dough by mixing the flour, egg, butter, and a pinch of salt and pepper until you obtain a smooth dough; cover and let it rest in the refrigerator for about 30 minutes.
Meanwhile, prepare the filling: cut the cherry tomatoes in half or quarters, marinate them in a bowl with the olives, balsamic vinegar, and extra virgin olive oil for about ten minutes, then season to taste with salt and pepper. In another bowl, beat 3 eggs with the cream and a pinch of salt and pepper.
Preheat the oven to 200°C. Roll out the dough thinly (3-4 mm) on a floured surface, shaping it into a circle. Grease and flour a 24-26 cm diameter cake pan. Place the circle of dough inside, shape it with your hands to fit the pan, then prick it with a fork and trim off the excess. Arrange the drained cherry tomatoes and olives, the roughly chopped mozzarella, and the egg-and-cream mixture on top. Bake at 200°C for about 50 minutes.
Prepare the accompanying sauce by blending the basil with the oil, a few drops of balsamic vinegar, and a pinch of salt and pepper. Remove the cake from the oven and serve warm with the basil sauce and salad of your choice.
