Two things we’d happily roll out of bed for: coffee and fluffy pancakes. And if you stir a splash of coffee into your favorite American pancake recipe, the result is phenomenally delicious coffee pancakes. Perfect for a hearty breakfast or a cozy brunch. With a cup of coffee, of course…

Whether you make them for your lover, your family, or your friends: with these American pancakes, you are sure to impress your dinner companions. We already enjoy these fluffy pancakes with a little powdered sugar and salted butter (like the one from Le Gall or the best butter in the world!), but want to go all the way? Then give them a generous drizzle of maple syrup. And if you want to add fruit, banana is the best option.

Making fluffy American pancakes with coffee

  • Dissolve the instant coffee in the water. Do you want a strong coffee flavor with your pancakes? Then feel free to add some extra instant coffee.
  • Whisk the egg in a large mixing bowl and add the buttermilk, melted butter, and dissolved coffee.
  • In a separate bowl, mix the flour with the sugar, baking powder, and salt. Now add this to the wet ingredients and stir with a whisk. For extra fluffy pancakes, the batter does not need to be completely smooth. Let the batter stand for 10 minutes before you start baking.
  • Heat a pan over medium heat. Add a knob of butter as soon as the pan is hot. Spoon some of the batter into the pan. Keep the size of American pancakes in mind.
  • Only flip the pancake once bubbles form in the batter.
  • Repeat this for the rest of the dough. Serve the fluffy coffee pancakes with a dollop of butter, powdered sugar, and/or maple syrup.
