Mac'n'cheese with zucchini and garlic breadcrumbs

Mac'n'cheese is a filling dish, but zucchini will refresh it and increase the fiber content. Plus, it's another great recipe for using up at least a small portion of zucchini in season. A quick one-pot meal that you can just place in the middle of the table and let diners help themselves.

Ingredients · Servings For 6 people
  • 300 g pasta
  • 50g butter
  • 1 bunch spring onions
  • 1 clove garlic
  • 3 pcs zucchini
  • 1 pinch of chili
  • 60 g plain wheat flour
  • 800ml milk
  • 25 g parmesan cheese
  • 100 g cheddar
  • 100 g gruyere cheese
  • 1 tbsp Dijon mustard
  • sourdough bread
  • 1 tbsp olive oil
  • 1 clove garlic
Method · 55 min
  1. Cook the pasta in salted water until al dente, then rinse with cold water and drain well. Heat a knob of butter in a frying pan and fry the spring onion and garlic clove until soft. Then add the courgette and chilli flakes, fry and stir for another 5-6 minutes until the courgette is soft. Remove from the heat.
  2. Heat a knob of butter in a frying pan and fry the spring onion and garlic clove until soft. Then add the zucchini, chilli flakes and fry, stirring, for another 5-6 minutes until the zucchini is soft. Remove from the heat.
  3. Heat the butter in a saucepan. Sprinkle with flour, stir in the roux and cook for 2 minutes, stirring constantly. Add the milk and stir constantly until the sauce is smooth. Bring the sauce to a gentle boil, then reduce the heat and let it simmer for a few minutes.
  4. Remove the pot from the heat and add half the Parmesan and all the cheddar and gruyère to the sauce. Add mustard and salt and pepper to taste. Finally, stir the cooked pasta into the sauce. Transfer half of the pasta to a baking dish. Arrange the zucchini on top of the pasta and spread the rest of the pasta on top.
  5. Cut the bread into slices, remove the crust and blend coarsely in a food processor. In a pan, briefly fry the garlic in oil and add the breadcrumbs and the rest of the parmesan. Mix and sprinkle the seasoned breadcrumbs evenly over the pasta.
  6. Place in a preheated oven at 200°C (fan 180°C) and bake for 25–30 minutes until crisp and golden brown. Source: Olive Magazine/Immediate Media
