A loaf of rye bread in Manhattan costs $60 and is divisive.
Rye, an Austrian bakery in New York, sells a 1.5-kilo rye loaf for $60, a price that has sparked debate.
Rye Bakery, located at 285 Lafayette Street in Manhattan, produces the world's most expensive bread. Its price of $60, just over €52, has sparked a wave of controversy that has even reached Italy. The debate centers on whether the price is an exaggeration or a justified one.
Its owner, Martin Auer, a baker of Austrian origin, opened his first shop in the United States with a clear objective: "To give craftsmanship and bread the prominence they deserve." The bakery sells only one type of bread, made with certified ingredients and exclusively by hand, using 100% organic rye flour imported from Austria, a sourdough starter that the family has preserved for 57 years, water, salt, and time.
The loaf is shaped by hand. It is round, shallow, and weighs about 1.5 kilos. Its crust is uncut, so the surface is smooth, with a brown and white veining.
The process takes time. The sourdough starter is worked for a day before making the bread, which is then kneaded, shaped, and naturally matured for about 24 hours. Baking takes about 70 minutes, and before selling, the bread rests for at least 8 hours on wooden racks, allowing it to stay fresh and delicious for a week.
At first glance, the price seems outrageous, especially considering it's the quintessential social staple, the bread that has fed entire populations through the toughest times. However, a little research reveals that the price is in line with the cost of living in New York.
Rent is key. A space of between 70 and 100 square meters in one of the city's most exclusive neighborhoods costs between $22,000 and $30,000 a month, about €19,800 and €27,000, plus the expenses of the triple net (NNN) leases common in New York, which cover part of the property taxes and building maintenance. With a loaf of bread costing $60, the bakery must sell between 400 and 500 loaves a month just to cover the rent.
In Italy, artisanal rye bread is also expensive, but you don't pay 52 euros for a 1.5 kilo loaf: prices remain around 20 euros at most.
