How to make a margarita without triple sec, using agave or simple syrup
Although triple sec adds sweetness to the margarita, it can be substituted with agave or simple syrup as long as the balance of the drink is maintained.
“You can make a smooth margarita without using orange liqueur — but you do need to replace it with another 'sweet' profile like agave or simple syrup to balance out the drink.”
Citrus juice, tequila, and triple sec are the three pillars of a classic margarita. It's difficult to substitute the citrus juice or tequila without losing the characteristic flavor, but the triple sec can be changed, as long as the drink retains the sweetness it provides. Substitutions are common in mixology and can be very successful depending on personal taste.
Susan Choi, owner of the Mr. Susan cocktail bar in Berlin, explains how to make margaritas without triple sec. She agrees that it can be substituted, but insists that the key is to use a suitable alternative. "Ultimately, the key to making a good drink is balance," Choi explained. "You can make a smooth margarita without orange liqueur, but you need to replace it with another sweet ingredient like agave or simple syrup to balance the flavor."
Some purists point out that with agave or simple syrup, the drink changes category and is sometimes called a tequila daiquiri with citrus juice. Even so, it still satisfies a margarita craving. Since simple syrup is a key ingredient in homemade triple sec, the flavor can be approximated by adding orange peel, orange juice, or a dash of orange bitters.
These substitutes also open the door to new flavors. According to Choi, "the fun of making drinks is the possibilities." Simple syrups can be infused with ginger, lemongrass, or chili, or with any other flavor that enhances the margarita.
